Bahamian Johnny Cake

The earliest attestation of the term "johnny cake" is from 1739 (in South Carolina); the spelling "journey cake" is only attested from 1775 (on the Gulf coast), but may be the earlier form.  When the Loyalists migrated from the Carolinas to the Bahamas to avoid George Washington and his gang, they most certainly took their Johnny cake recipe.  Johnny cake is eaten in many different countries, but the recipes range greatly. The Bahamian versions, which Island and Resort favors, have less cornmeal than most, and are often lower in fat.  Give this a try


INGREDIENTS:

1 Cup flour
3/4 cup cornmeal
3/4 tsp. salt
1 egg, beaten
5 tsp. baking powder
1/3 cop sugar
2 Tblsp. vegetable oil
1 cup milk

And Now:

Preheat oven to 350F. Mix all dry ingredients together. Add egg, milk and oil to dry mixture and blend well. Pour into 8 inch square pan. Bake 30-35 minutes until slightly brown on top. Serve hot or cold with butter, honey or preserves.
